Well hello there chilly weather. I haven’t missed you one bit! I miss my flip flops already, but I’m excited to get the oven back in comission! Salmon was on sale at the supermarket, so I decided to try playing around a bit with some new flavors. I hope you enjoy this as much as we did!
2 salmon filets
1/2 cup whole roasted cashews
1 Tbsp. Honey
1 clove garlic – minced
Salt & pepper to taste
1. Preheat the oven to 425 degrees.
2. Line a baking sheet with foil, spray with cooking spray, and place the salmon filets on it.
3. In a food processor, grind the remaining ingredients together until they are incorporated together. Do not over process, leave some nutty chunks!
4. Press the nut mixture onto each of the filets to form a crust and bake for 20 minutes or until salmon is cooked through and topping is browned.
