Roasted Leeks

I love leeks in quiche or soup, not there is no better way to bring out their flavor than roasting them! This recipe is so simple and the leeks do all the work for you as they release their flavorful goodness!

ingredients:
1 bunch of leeks (usually three “stalks”)
2 Tbsp. Olive oil
Salt & pepper to taste

1. Preheat oven to 425 degrees.
2. Wash leeks well as they contain a lot of sand and dirt.
3. Cut leeks into 1 inch pieces and toss with olive oil, salt, and pepper in a baking dish.
4. Roast for 35-40 minutes tossing occasionally until leeks begin to brown.
