I love spending my days with my precious baby girl, but I’m not going to lie… It gets boring. After spending the entire morning reading stories, tummy timing, and sounding like a broken record singing nursery rhymes (ok, a very off key broken record), I decided it was time to poke around the kitchen to find something yummy to make. I love having healthy snacks around so I don’t spend the day pining after the non-paleo snacks that live in the pantry. Muffins are great because you can alway double up the batch and freeze them for a snack time emergency or a rushed morning breakfast. A minute in the microwave and you have a delicious warm muffin!
Makes 9 muffins
1/4 c. coconut oil
1/4 c. almond milk
2 Tbsp. honey
1 tsp. vanilla
1 1/2 c. almond meal
1 Tbsp. cinnamon
1 tsp. nutmeg
1 tsp. baking powder
Pinch of salt
1 apple – peeled, cored, and diced
1. Preheat oven to 350.
2. In a medium mixing bowl with an electric mixer in low, mix coconut oil, almond milk, eggs, honey, and vanilla.
3. In a large mixing bowl, stir together almond meal, cinnamon, nutmeg, baking powder, and salt.
4. Fold wet ingredients into dry ingredients until uniformly mixed. Fold in apple.
5. Pour into muffin tin sprayed with cooking spray and bake for 20 minutes.
