Paleo Carrot Cake Muffins

There’s something about carrot cake that makes you feel like you are opting for the “healthy” dessert. No, it’s not. However, this version is….and you can eat it for breakfast without any guilt!

Ingredients:
1 cup almond flour
1/2 cup coconut flour
1/2 cup melted coconut oil
1 1/2 cups almond milk
1/2 cup honey
3 eggs
1 1/2 Tbsp. baking powder
2 tsp. cinnamon
Pinch of salt
1 cup grated carrot
1/2 cup chopped walnuts

1. Preheat oven to 350.
2. Mix together all ingredients in a large bowl except for the carrots and walnuts. Once everything is incorporated, fold in carrots and walnuts.
3. Spray a muffin tin with coconut oil cooking spray. Pour batter into cups and bake for 30 minutes or until a toothpick comes out clean.
