Broccoli Rabe and Sausage Stuffed Spaghetti Squash

Before I became a cavegirl, pasta was my absolute favorite dish. Ok, who am I kidding, it IS still my favorite dish, I just don’t eat it. While you can’t go into a spaghetti squash meal anticipating a giant bowl of pasta in front of you, it sure does make a great substitute! By making it this way, it absorbs that incredible flavors from the sausage and broccoli rabe making for a VERY satisfying meal!

1 spaghetti squash
4 links turkey sausage
1 bunch broccoli rabe
1 Tbsp. olive oil
3 cloves garlic – minced
1 tsp. crushed red pepper flakes
Salt & pepper

1. Preheat oven to 400 degrees. Cut squash in half and scoop out seeds. Place face up on a baking sheet, drizzle with olive oil, and season generously with salt and pepper. Bake for 45 minutes or until you can easily insert a fork in the flesh.
2. While the squash is baking, sauté garlic in 1 Tbsp. of olive oil in a large pot until fragrant. Add broccoli rabe, stir, and sauté until wilted. Remove from heat and set aside.
3. Remove turkey sausage from casing and brown to crumbles in a large frying pan. Once brown, transfer into the broccoli rabe pot (do not drain).
4. Once the squash is done, carefully scoop out the “spaghetti” using a fork. It will be VERY hot. Mix spaghetti into the pot of broccoli rabe and sausage. Season with salt, pepper, and crushed red pepper flakes. Transfer the mixture back into the rinds of the squash. Place back in the oven and cook for 10 more minutes.
