Remember how I said I follow a modified paleo diet? Well, peanut butter is just one of those things I am not willing to give up. Are you following a strict paleo diet, go ahead and swap almond butter for the peanut butter! These are DANGEROUSLY good. While good for you, it’s taking things a bit extreme to finish off the pan in one sitting. Make sure you have an ice cold glass of almond milk to complete the experience!
1/2 cup coconut flour
1/2 cup almond flour
1/4 cup coconut sugar
1/4 cup cocoa powder
1 Tbsp. baking powder
Pinch of salt
2 small ripe bananas – mashed
1/4 cup coconut oil – melted
1/4 cup almond milk
1/4 cup peanut butter – melted (40 seconds in my microwave)
1. Preheat oven to 350 and grease an 8×8 pan with coconut oil cooking spray.
2. In a large bowl, mix coconut flour, almond flour, cocoa powder, coconut sugar, baking powder, and a pinch of salt.
3. In a separate medium sized bowl, mix together bananas, coconut oil, eggs, and almond milk.
4. Add the wet mixture to the dry mixture and stir until incorporated and transfer into pan. Pour peanut butter evenly on top and bake for 20 minutes.
