There’s nothing better than a perfectly seared tuna steak…. except a perfectly seared tuna steak crusted in coconut and served with a side of pineapple salsa! Talk about a simple meal that takes very little prep! I think my hubby was confused when I called him to dinner. He looked at me like “did you just start cooking 5 minutes ago?!”
Prep the salsa in advance. It will allow the flavors to blend together, and make it much easier to get dinner on the table later on if you are in a hurry!
2 Tuna steaks (about 1/2 pound each)
1/4 cup finely shredded unsweetened coconut
1 Tbsp. coconut oil
1/2 cup diced pineapple
1 red bell pepper – diced
1/2 red onion – diced
1 tsp. apple cider vinegar
1 Tbsp. orange juice
Salt & pepper to taste
1. In advance, combine pineapple, red pepper, red onion, vinegar, orange juice, and salt & pepper to taste in a large bowl. Cover and refrigerate until ready to serve.
2. When ready to sear the tuna, heat the coconut oil over high heat in a frying pan until pan is super hot. While the pan is heating, press the tuna steaks into the coconut (if it does not stick, spray the tuna with coconut oil cooking spray first).
3. Sear the tuna for 2 minutes per side for a perfect medium rare piece of fish.
4. Serve with a pile of pineapple salsa!
