Salmon Topped Power Greens Salad

This is such a refreshing meal that will leave you completely satisfied!  It is so nutrient dense that you will know you are treating your body right as you nosh on this tasty meal!  My local supermarket has bagged “power greens”.  It’s a mix of spinach, baby bok choy, and baby red & green chard.  If you cannot find this are your store, you can substitute baby spinach and it will be just as tasty!

Ingredients:

2 serving size filets of salmon – skin removed

1 13.25 oz bag of “Power Greens”

1/2 cup sliced strawberries

1/4 cup chopped walnuts

3 Tbsp. olive oil

Juice of 1 lemon

1 garlic clove – VERY finely minced

Salt & Pepper

1.  Preheat broiler.

2.  Place salmon on a baking sheet and generously season with salt and pepper.  Place 6 inches from the broiler flame and cook for 5 minutes or until cooked through.

3.  While the salmon is in the broiler, in a small bowl, whisk together olive oil, lemon juice, garlic, and salt and pepper.  Place power greens, strawberries, and walnuts in a large mixing bowl.  Pour vinaigrette over the salad and toss.  Pile onto 2 plates.

4.  When salmon is done, place on top of the dressed salad beds and serve!
