Bacon Mushroom Paleo Quiche

Quiche is really a very overlooked food. It makes a perfect breakfast, lunch, or snack. It is packed with protein. It reheats awesomely in under a minute. You can throw anything you have laying around the house into it.

I always like to have extra dinner left over for lunch the next day, but I knew that wouldn’t be the case tonight. I decided to whip up this bad boy to make sure I had lunch ready to go for tomorrow. The best thing is that my hubby and kids also have a quick and nutritious breakfast ready to go tomorrow morning!

For crust –
1 1/2 cups almond flour
1/4 cup coconut oil – melted
1 Tbsp. water
1/4 tsp. salt
1/2 tsp. baking soda

For filling –
6 eggs – whipped
5 slices bacon – chopped
1 small onion – sliced
1 package sliced mushrooms
Fresh cracked black pepper

1. Preheat oven to 350. Mix all crust ingredients in a mixing bowl until incorporated and then press into a pie plate. Bake for 15 minutes or until brown.
2. While crust is baking, brown bacon in a large frying pan. Add onions and mushrooms and sauté while stirring for 5 minutes. Season with black pepper to your liking.
3. Scoop mushroom mixture into pie crust, pour whipped eggs over, and bake for 25-3o minutes at 350 until set,
