Bruschetta Salmon

This meal was fabulous, but by far the best part of it was watching my beautiful nearly 9 month old house some salmon! This kid loves her fish! It really is incredible watching your little baby pick through the food on her tray to find the bits of salmon. She never ceases to amaze me!

This meal was super easy to grow together. I served it with a side of sautéed kale and it was super packed with nutrients!

Tropical Shrimp Salad

You learn something new every day!  Did you know that the same substance that makes people allergic to poison ivy is in the skin of a mango?  I have spent my entire relationship with my hubby refraining from eating mango because he had a reaction to it.  Well, we just found out that it’s just the peel of it, so as long as I had it all prepared we could enjoy it!  Thank goodness, because this meal was delicious!  As the weather is warming up, fresh crisp salads seem to taste even better than usual!

Grilled Napa Cabbage

I was in a veggie rut.  It seems like every time i am standing in the produce aisle, it is the same boring options.  I took a closer look at the green leafy section and I stumbled across Napa cabbage.  Hmmm, something new!  I had no clue what to do with it, so I decided to attempt to grill it since I already had the grill going.  It turned out delicious!!

Lemon Thyme Rainbow Trout

It’s trout season!  I know this makes my daddy-o very happy because they stock the rivers by us.  Opening day, he went out with my husband and they brought home 7 delicious fish!  I love two things about this:

1. My father and husband get along great.
2. Fresh fish for dinner!


I was struggling with a way to make them tastier than just straight up grilling them, so I decided to make a sauce that the Portuguese in me would call a “molho”.  You could use anything you have around the house to make this scrumptious, so I went with what I had.  Who knew that my garden thyme would have survived the winter!?  While I grilled up a big fish feast, I have scaled down the recipe to serve two.

Salt and Vinegar Chicken

I can house a bag of salt and vinegar potato chips like no other, but since potatoes aren’t exactly paleo, I decided to create this recipe instead to get my fix. Marinating the chicken in vinegar leaves behind juicy meat and cooking it at a high temperature allows for crispy skin.  I’m not going to lie, I wasn’t exactly sure how these thighs were going to turn out, but they were incredible! Nom nom nom!!

Salmon Topped Power Greens Salad

This is such a refreshing meal that will leave you completely satisfied!  It is so nutrient dense that you will know you are treating your body right as you nosh on this tasty meal!  My local supermarket has bagged “power greens”.  It’s a mix of spinach, baby bok choy, and baby red & green chard.  If you cannot find this are your store, you can substitute baby spinach and it will be just as tasty!

Stuffed Pork Loin Roast with Sausage Stuffing

My favorite part of Thanksgiving dinner is the sausage stuffing.  A once a year treat… until now!  I took out the bread to make it paleo and the flavors did not disappoint!  Carving up a pork loin roast can be a daunting task.  Not sure how to get started?  A quick Google search can provide you with many answers as to how to “butterfly” a pork loin roast (no, not tenderloin).  Serve this with a batch of sauteed brussel sprouts and you have an awesome and satisfying meal!

Tropical Tuna Steaks

There’s nothing better than a perfectly seared tuna steak…. except a perfectly seared tuna steak crusted in coconut and served with a side of pineapple salsa!  Talk about a simple meal that takes very little prep!  I think my hubby was confused when I called him to dinner.  He looked at me like “did you just start cooking 5 minutes ago?!”

Prep the salsa in advance.  It will allow the flavors to blend together, and make it much easier to get dinner on the table later on if you are in a hurry!

Lamb Meatballs with Lemon Dijon Sauce

Holy cow!!! Errr, lamb? Awesome recipe! You really can’t go wrong pairing these flavors together! It looks just like Swedish meatballs, but don’t expect that heavy meal here. This dish pulls in such incredible flavors from such simple ingredients! I know for a fact that the hubby will be requesting these again!
1 lb. ground lamb
2 cloves garlic – minced
1 egg
2 sprigs rosemary – taken off twig and minced
2 Tbsp. coconut oil
1 cup beef broth
1 Tbsp. Dijon mustard
Juice of 1/2 a lemon
1 Tbsp. arrowroot flour
Salt & pepper to taste

1. Preheat oven to 375.
2. In a mixing bowl, mix lamb, 1/2 of the garlic, egg, rosemary, salt, and pepper. Roll into 1 inch balls.
3. Heat 1 Tbsp. coconut oil in a large frying pan over high heat. Fry meatballs in small batches while rotating to brown on all sides. Place on a cookie sheet and roast for 15 minutes.
4. While meatballs are roasting, heat 1 Tbsp. coconut oil in a small sauce pan over high heat. Add garlic and sauté until fragrant. Whisk in beef broth, Dijon mustard, and lemon juice, bring to a boil. With 2 minutes to go until serving, take 1/2 cup out and put into a small bowl. Sprinkle arrowroot in and stir until incorporated. Return to saucepan and stir in to thicken.
5. Remove meatballs from oven and serve over a pool of lemon Dijon sauce.

Quick and Simple Grilled Chicken

Some days just get away from you. Earlier this week, I had one of those days. It was 7:30, I was hungry, and there was raw chicken in the fridge with no dinner in sight. I threw this together in hopes that it would be good even though it didn’t spend time marinating. Wow, did I luck out! In 15 minutes, there was perfect (and scrumptious) chicken on the table! While it was grilling, I quickly sautéed up some asparagus and we had a delicious healthy meal in front of us!
1 package boneless skinless chicken thighs
Juice of 1/2 a lemon
1 Tbsp. spicy brown mustard
2 cloves garlic – minced
Salt & pepper

1. Preheat grill to medium high heat. In a large bowl, whisk together lemon juice and mustard. Stir in garlic and salt & pepper to your liking. Toss chicken in and coat.
2. Grill for 5 minutes per side and enjoy paired with a sautéed veggie for a healthy meal!
